Specific Duties: Assist the Executive Chef in retaining the 5 Red Stars and three Rosettes.Work towards achieving a fourth Rosettes and a Michelin Star in the Fine Dining restaurant, Oversee and run the Pastry operation, which caters for all food outlets, look after all Conference and Banqueting (marquee events) Work closely with the Executive Chef to develop and produce creative, consistent seasonal dessert menus which include a la Carte, tasting and TDH, Head up a team of 6 Pastry Chefs to produce all breads, petit fours and desserts for this busy hotel/restaurant, Work as part of the management team for a brigade of over 30 chefs. Managing the GP, ordering, stock and wastage within the Pastry kitchen.

Assist in the training of the Sous Chef, Chef de Partie, Demis and Commis Chefs in the Pastry kitchen, lead and coach Pastry employees, ensure that the Pastry kitchen is organised with the correct daily function sheets, mis en place, job lists and jobs are prioritised in correct order, maintain a professional level in the Pastry kitchen, adhering to the Standard Operating Procedures and Policies.

Ensure that the Pastry areas are clean and meet safety standards, HACCP and Health and Safety procedures. Ensure that all Pastry equipment is fully functional, stored correctly and staff are looking after the equipment. Work alongside the Executive Chef in cookery classes and demonstrations, support the Executive Chef in PR activities, recipes and columns. Occasionally assist in the other kitchen area within the hotel.
