A new fine dining restaurant that is focused on modern Indian cuisine with a European twist is opening in Oxford they are looking for an experienced Sous Chef to join their team. You are not required to have experience with Indian cuisine, however, you will need to be familiar with fine dining and have the passion and flair needed to upkeep the restaurants high standards. You will report to the Head Chef and the Executive Chef and your main duties will be:

Main Duties:
*To have a thorough understanding of the food philosophy, and the culinary direction that is required for the product.
*To have a thorough understanding of the Chefs Operations Manual and to ensure that the normal kitchen operations are performed in a manner as instructed in it.
*To possess and develop quality awareness in every aspect of the business, from procurement and sourcing, to handling and preparation, through to finishing and presentation of dishes.
*To assist the executive chef in day to day running of the kitchen, viz. rosters, supervision of porters and rest of the team, allocation of duties, procurement of ingredients etc.
*To establish a rapport with team and maintain good supplier relations.
*To assist the headwaiters and Management team in compiling information on menus, new dishes and general awareness on speciality ingredients and the product.
*To have a thorough knowledge and understanding of all items listed on the menus, daily specials, number of portions and things to push.
*To check the cleaning company staff/porters in their job.
*To ensure that daily, weekly and monthly activities and checklists are carried out as agreed.
*To ensure that all equipment, including crockery and china is properly cared for and that necessary par stock levels are maintained at all times. To advise the chef in advance of any requirements that might come up from time to time.
*To oversee the daily appearance and personal hygiene of staff, ensuring that they maintain the highest possible standards at all times. Advise on uniforms as required.
*To liaise with the Reception team and assist in maximising table usage through planning, organisation and communication.
*To attend regular meetings with fellow managers to ensure continuity of standards and procedures.
*To Be A Leader-To train, develop and support all kitchen staff. Lead by example, conduct and carry out duties in a manner that are exemplary.
*To work as the eyes and ears for the chef feeding him on development of team, and communicating any concerns as and when required.
*To set up systems of care and maintenance of all equipment and advice of maintenance needs.
*To carry out any other reasonable duties as assigned and be prepared to work in any other establishment owned by the company.
*To handle customer complaints, requests and enquiries with maximum courtesy and efficiency and to refer to Senior Management or other relevant parties as requested.
*To work as a team player at all times and be prepared to be flexible in order to ensure that operations are always as efficient and profitable as possible.

In return you will receive first class training and the opportunity to gain qualifications. You will need to be Level 2 Qualified and have the knowledge required to run the kitchen in the absence of the Head Chef. The working hours will be on a rota basis working five days out of seven and you will receive excellent company benefits. The salary is up to £32,000 dependant on experience.
