Our client, a leading University are looking for a Chef Manager to oversee the successful running of a150 seat Restaurant. Ensuring the delivery of excellent food and customer service whilst working to agreed KPIs and within budgetary restraints.

The main duties of the post will include:

▪ Running of the day to day operation of the restaurant kitchen including rotas, shift patterns for chef's and porters, in line with fluctuating business trends

▪ Line managing a team of Chefs and Porters; responsible for ensuring a quality and consistent service is provided to customers and ensuring day-to-day smooth running of the kitchen

▪ Work closely with the Retail Operations team in relation to the front of house service, to implement procedures and protocols for a seamless service

▪ Managing compliance of food hygiene, cleanliness and health and safety regulations by all staff

▪ Ensuring daily procedures to run the outlet are followed diligently by all staff.

▪ Work closely with the Executive Chef to bring and implement new menu ideas to keep up with ongoing food trends

▪ Work with the Retail Operations Manager and their team to continually improve customer service assessing feedback from mystery shopper reports and implementing change when needed

▪ Oversee all ordering, stock levels and management, storage, controlling wastage to achieve set GP's

▪ Ensure personal development of the catering team through appraisals and PDPs.

▪ Be responsible for food production, presentation and portion size to a high standard and ensure this standard is maintained throughout the business.

▪ Ensure the department delivers customer satisfaction through exceptional food quality, utilising local fresh produce, recognising the importance of plant-based foods and using them to produce menus of change

▪ React accordingly to all customer feedback, and implement improvements where required.

▪ Control the financial requirements of the business. Ensure target GP's and wage ratio are inline with budget requirements.

▪ When required work in other areas of the campus and support in the running of events as and when required
