SOUS CHEF REQUIRED IN RIPON FOR A CASK ALES BREWERY AND RESTAURANT

(A'LA CARTE)


PURPOSE OF THE ROLE


We require a driven hands on Sous to assist The Head Chef with all aspects of the kitchen operation from menu development, compliance including daily paperwork, training and leading the team from the front.


ACCOUNT-ABILITIES/DUTIES OF THE ROLE


  • Manage the day to day running of a section
  • Lead the kitchen in the Head Chefs absence
  • Ensure the kitchen is clean and ready for a EHO inspection
  • All plates to leave the kitchen hot, fresh and presented in line with Head Chefs spec
  • Daily ordering and stock control including month end stock counts


SKILLS
(Suggestions - computer skills, word, excel, languages, driving, taking minutes)


  • Keen eye for detail
  • Hands on approach to expand knowledge of food

  • Ability to work under pressure in a high volume kitchen
